“How Sweet It Is:  Improving the Taste of Stevia”

Stevia has captured the attention of the flavor market due to its status as a natural non-nutritive sweetener, appealing to the trend towards “natural’ and “healthy foods.  To many consumers, stevia has distracting flavor notes, characterized as bitter, metallic, or licorice-like.  This presentation will summarize the industry’s state of knowledge and show some options for improving the taste impressions of stevia-sweetened beverages.
